Let's see. ..still a box of persimmons. They are getting soft and have those awesome sugar spots. Perfection brewing!
First things first. ... find the speckled soft fruit and puree up two cups and set aside
Now, sift thefollowing:
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon nutmeg
1 1/2 teaspoons salt (sea salt preferably)
2 - 2 1/2 cups sugar
Set aside. .... lots of setting aside.
Melt one cup of butter and cool (you guessed it, set it aside)
Mix puree, four room temperature eggs, 2/3 cups cinnamon whiskey and cooled butter.
Pour slowly into a well in your dry mixture and mix well.
Divide into two greased bread pans and bake for one hour at 350º.
