Easy, breezy pineapple squeezie? OK, so maybe that didn't roll off the tongue smoothly, but they are all the perfect description for this pineapple dessert.
The hardest part about this sinfully simple creation is deciding if you want to make it as a pie or as bars....trust me though, flip a coin and the hard part is over.
For the pie version use a frozen 9" crust, or you can make your own if you want to up the challenge level, and for bars use crushed cookies or graham crackers moistened with some melted butter to coat the bottom of a pan.
Filling:
8 1/2 ounces crushed pineapple, drained
3 eggs
1/3 cup butter or margarine (softened)
1 1/2 cups sugar
1 tablespoon vanilla
Cream the butter and sugar together. Add eggs one at a time to mixture. Sure in people and vanilla. Pour into pie crust or into crumb lined pan. Bake at 350° for 40-50 minutes until firm and golden.
Really, that's it. Nothing else. Now go bake!
