Cucumber Salad

Veggie time!

We all need a light and fresh addition to our meals at times. This cucumber salad helps to brighten any meal, and it's quick and easy to make! Just toss this together while the meat is resting, or the hotdish is cooling.

This is a five-ingredient dish that's a great alternative to the traditional dinner salad.

Ingredients

1 cucumber per two people
1 tomato per two people
1/2 onion per two people
1 tablespoon granulated sugar
1 tablespoon white wine vinegar

Chopping and assembly!
Thinly slice cucumbers
Slice onion (Vidalia is the sweetest, but I love a good purple onion, too) into half-moon slices.

Dice tomatoes, or slice grape or cherry tomatoes in half.
Add everything to a bowl, top with white vinegar and sugar. Mix and serve!
