Dry Rub of heaven!


How many times do you kick on the BBQ or smoker to pop in an amazing cut of meat then wonder "what am I going to season this with"? Maybe it's just me, but I doubt it. I am always looking for that great, "go to" seasoning to toss on or marinate with. I want something to enhance flavor, bring flavor, open the tastebuds, and make eating a sensual treat. 

Saying that, I wonder if I'm asking too much out of a seasoning rub. Actually, I think not. I slathered a rub that I concocted onto a tri-tip today, and let me just say, I achieved all of that. Yes.... food nirvana!


Before you read the ingredients and say NO, just no, no way, get out of here, and click away, let me just say the coffee bean is magic. Pure and simple magic. It's the bean that Jack SHOULD have gotten when he traded in that cow. Coffee is amazing, plus... no giants! Coffee adds depth to the other spices. There is little actual coffee flavor, but somehow it just merges the other flavors together like .... magic. There is no other word. So, let's take a magical ride. Shall we?

2 tablespoons sea salt - I love pink Himalayan

1 tablespoon mild chili powder

1 tablespoon smoked paprika

2 teaspoons cumin

1 tablespoon black pepper

1 tablespoon brown sugar

1 tablespoon instant coffee grounds

1 tablespoon onion powder

2-3 teaspoons garlic powder

Combine all the ingredients in a bowl or lidded jar, mix or shake until blended, then use to your heart's content.  Use as liberally or as sparingly as you want. I love it on burgers, tri-tip, wings, and steaks.  For best results, keep it sealed until use, then let it absorb into the meat for at least 30 minutes.
